If the amount of carbohydrates is the same, which is more likely to increase the risk of obesity: ramen or rice? People who are "noodle lovers" should be cautious.
One of the causes identified for obesity is excessive carbohydrate intake. However, there are domestic research findings indicating that the risk of obesity is higher when the intake through noodles such as ramen or jjajangmyeon exceeds the total carbohydrate consumption.
An analysis of 137,363 adult men and women at Kangwon National University revealed that the more carbohydrates they consumed and the types of foods they mainly ate, the more their risk of obesity increased. The group with the highest intake of noodles had a significantly higher risk of obesity. Among obese individuals, 17.9% (6,798 people) belonged to the group with the lowest noodle consumption, while 22% (8,338 people) belonged to the group with the highest noodle consumption. Of the 44,307 obese individuals, the risk of obesity was found to be similar between the group with the highest carbohydrate intake (8,874 people) and the group with the lowest carbohydrate intake (8,523 people).
This is analyzed as a result of the processing of carbohydrates during milling. Brown rice or whole wheat are consumed as grains in their natural form, whereas flour is obtained after multiple milling processes that remove the outer layers of the grain. Repeated milling reduces the levels of nutrients such as vitamins and dietary fiber that are originally present in the grain itself. Dietary fiber plays a role in slowing down the digestion of carbohydrates in the human body and reducing the amount absorbed into the body, so even when consuming the same amount of carbohydrates, the amount of dietary fiber intake becomes an important factor.
Noodles are made by grinding polished wheat into flour, so they have a low dietary fiber content.
In the case of plain white rice, it undergoes polishing but is not ground or milled, so the processing process is less than that of flour.
When eating rice, it is best to choose minimally processed brown rice or whole grain rice whenever possible.
