Tteokgalbi is a dish made by seasoning ground meat and cooking it. However, ground meat contains a lot of saturated fat and cholesterol and is high in calories, making it not ideal for people with diabetes. Instead of ground meat, we have prepared 'tofu tteokgalbi' using low-fat protein tofu.

Instead of meat, tofu and vegetables are used to keep the calories low while packing plenty of nutrients such as protein, various vitamins, and minerals. The shape and seasoning of the grilled short rib patties are authentic, so enjoy them deliciously!

High-protein tofu that is good to eat often

 

Tofu is a suitable ingredient for diabetes patients to eat without burden. Rich in high-quality protein, it helps muscle formation and keeps you full for a long time, preventing excessive intake of rice or other side dishes eaten together. The calcium, magnesium, and other components in tofu benefit not only bone health but also improve cardiovascular health, making it good for preventing various complications.

The eritadinen contained in shiitake mushrooms helps improve blood sugar levels by promoting insulin secretion from the pancreas. The base of the shiitake mushroom contains the highest amount of eritadinen, so it is recommended to include the base when cooking. Consuming just two or three mushrooms a day can meet the daily vitamin D requirement. Vitamin D is an essential nutrient for maintaining bone health in diabetic patients, whose bones become weakened due to high blood sugar.

Whole wheat flour raises blood sugar less than regular flour when consumed, making it suitable for use in dishes for diabetics. It is also rich in dietary fiber, protein, and minerals compared to flour. It has a more textured feel than flour, enhancing the texture of the finished tteokgalbi. When mixed appropriately with glutinous rice flour, it creates a soft and chewy taste.

 

Ingredients & Recipe (for 2 servings)

1 block of tofu (300g), 4 shiitake mushrooms, 1/4 onion, 30g carrot, 1/4 zucchini, 50g green onion, 1 teaspoon minced garlic, 1 teaspoon salt, 1 egg, some whole wheat flour, some glutinous rice flour, a little olive oil

1. Tofu is mashed.

2. Shiitake mushrooms, onions, carrots, zucchini, and green onions are finely chopped.

3. Add one egg to the tofu and sliced vegetables, then mix well.

4. If the dough is too soft, add a little whole wheat flour and glutinous rice flour to make it firm.

Add a little salt to season.

6. Shape into a flat, rib-shaped form, then coat with oil, wipe off excess, and cook until golden brown in a frying pan.
