My husband's friend's parents sent us homemade salted fermented fish.

One spoonful is enough to finish a meal. Enjoy your delicious meal!

It's delicious just to put on rice, and it's also good for wraps like cabbage wraps and other leafy vegetables.

It also tastes good when you put it on grilled seaweed for lunch.

Why is it considered helpful for digestion enough to be called a digestive aid?

 

Freshwater shrimp, Tohha, is rich in proteases and lipases that break down proteins and fats. These components become active during fermentation, playing a role in alleviating indigestion symptoms and activating digestive functions when consuming excessive amounts of meat. According to one study, the process of aging Tohha reveals a stronger antimicrobial effect than food preservatives like benzoic acid, making it highly effective in preventing gastrointestinal diseases caused by infections.

 

 

The reason for adding glutinous rice to salted fermented shrimp

 

Tohajeot is a fermented food. To ferment well, carbohydrates are needed. Shrimp do not contain much carbohydrate. Therefore, fermentation can be slow, but by adding glutinous rice to Tohajeot, the high-quality carbohydrates in the rice help facilitate the fermentation of Tohajeot. After mixing salted Tohajeot with garlic, ginger, glutinous rice, and red pepper powder, which help eliminate the characteristic earthy smell of Tohajeot, and aging for about two days, the flavor of Tohajeot becomes even milder.

 

 

What is the difference between shrimp salt and fermented pollock roe, which are good for digestion?

 

Shrimp salt has the effect of promoting digestion, but because it is made with only salt, it has a high sodium content. On the other hand, toha salt is fermented by mixing salt with other ingredients, so it has a lower sodium content compared to shrimp salt.

However, since salted fermented fish is also made through salting, its sodium content is not low, and red pepper powder can irritate the stomach, so people with gastrointestinal issues or high blood pressure should eat it about once a day, and an amount equivalent to about one spoonful of rice per bowl of rice is appropriate.

    잡아와서 김치넣고  김치 찌개 해먹어는데
    요즘은 이것도 양식을 해서 나오더라고요

      남편이 워낙 좋아 사니니까 한통 보내주셨어요
      이거손도 많이 가는거라서  정성가득이잖아요 
      밥에 올려 먹음 젤 맛이 좋은거 같아요

      저녁밥상이요 
      점심은 대충 어제 생고등어조림으로 먹고 
      저녁은 제육볶음 해서 배추쌈에 먹었는데,
      토하젓을 곁들이기 하니까 너무 맛이좋아요 ㅎ
      ㅋㅋ 매일 맛난것들만 먹어서 살이 포동 포동 해져요
