The food most commonly eaten during dieting is probably chicken breast or eggs.

The usual way to eat eggs is by boiling or frying them.

[Herald Economy = Reporter Kim Juri] Experts have issued a warning that eggs, which are known to be rich in nutrients beneficial for brain health such as choline, may increase the risk of heart disease and cancer depending on how they are prepared.

On the 31st (local time), health information media Health Digest quoted Canadian nutritionist Angel Luke, saying, "When cholesterol becomes overactive, a compound called oxysterol can be produced," and "According to some studies, oxysterol has negative effects on health, such as increasing the risk of heart disease and cancer."

 

 

According to the media, Luke explained that oxysterols are formed when dietary cholesterol is cooked at high temperatures above 350°F (approximately 177°C) for a long time. Oxysterols are commonly known to bind with LDL cholesterol, often called 'bad cholesterol,' and are known to increase the risk of atherosclerosis and heart disease.

 

Last month, the international journal Cancer Prevention Research published a study indicating that high levels of oxysterols increase the risk of colon cancer by 22%. Additionally, a paper titled "Lipids of Health and Disease" published in 2017 mentioned that although the body does not absorb all oxysterols, absorption could be harmful to blood vessels. Researchers do not fully understand the role of oxysterols in cancer, but they believe it may be related to bodily inflammation.

However, experts advise that there is no need to exclude eggs, which are rich in protein, unsaturated fatty acids, essential vitamins, and minerals, from the diet.

In this regard, Luke recommends a vegetable omelet that can be cooked even over low heat, stating, "Egg protein is more easily digestible, and vegetables provide additional fiber and antioxidant compounds." He also mentioned that using avocado oil, which is rich in monounsaturated fats and helps lower cholesterol and reduce the risk of heart disease, is safe. He advised using less oil to prevent burning, as excess oil can cause the food to burn more quickly.
