Tofu, a food rich in protein. We explore small questions about tofu, such as which tofu is fresh, and how to store leftover tofu after cooking.

 

First, the tofu should have a smooth surface and intact edges without breakage. The brine used to soak the tofu should also be cool and clean to ensure freshness. If the brine appears cloudy, foamy, or becomes murky when shaken, it is best not to purchase it.

If it's fresh tofu, you can easily remove the characteristic fishy smell by rinsing it a few times with water. If it has been a few days since purchase and has been opened, boiling it in water with some salt once will eliminate the odor. If it smells sour, it means it has gone bad and should be discarded.

Store leftover cooked tofu in an airtight container, fill it with clean tap water, sprinkle a little salt, and cover with a lid to keep it fresh for a longer time. If you don't plan to eat it for a long period, it's also good to mash the remaining tofu, squeeze out as much water as possible, wrap it in plastic wrap, and store it in the freezer. Frozen tofu can be thawed at room temperature and used for dumpling fillings or mixed vegetables.

Meanwhile, the moisture content of pan-fried tofu and stew tofu differs. Pan-fried tofu is mainly used for frying, braising, and frying, and has a firm and solid texture that does not easily crumble. Stew tofu has a soft texture and is easily broken. Since it cooks quickly, it should be added just before the stew or hot pot is fully prepared, and brought to a boil once.

      그런데 소금 부으면 7일은 거뜬해요
