A study has shown that consuming vegetables and fruits as fresh juice is more effective for absorbing vitamin C than chewing and eating them whole.
Professor Eunju Park's research team at Gyeongnam National University of Science and Technology's Department of Food and Nutrition investigated the effects of consuming vitamin-rich vegetables and fruits as freshly squeezed juice on absorption in the body. To this end, the research team conducted a crossover study over the past year with 12 healthy adults.
The research team measured the blood vitamin C levels after having the subjects either chew and consume whole tangerines, bell peppers, and cherry tomatoes rich in vitamin C or drink them as freshly squeezed juice.
As a result, the bioavailability of vitamin C (Area Under the Curve, AUC) was found to be 1.7 times higher when consumed as freshly squeezed juice compared to chewing and consuming whole vegetables and fruits. In other words, more vitamin C was absorbed into the body when consumed as juice than when chewed and eaten whole.
Vegetable and fruit peels contain dietary fiber, but when juicing, the dietary fiber is removed and only the contents are included. This process results in increased nutrient intake.
The World Health Organization (WHO) recommends consuming at least 400g of vegetables and fruits per day, while the Ministry of Health and Welfare recommends at least 500g per day. However, it is not easy to meet these recommended amounts amidst busy daily life. According to the National Health Statistics announced by the Korea Disease Control and Prevention Agency last year, only 25.5% of the population consumed the recommended amount of vegetables and fruits as of 2021. This is a continuous decline from 38.6% in 2015.
The dietary guidelines for Americans from 2020 to 2025 suggest that consuming 100% vegetable and fruit juices can help ensure adequate intake of vegetables and fruits. This is because drinking juice allows for the convenient consumption of a large amount of vegetables and fruits in a single glass. However, it is important to drink only homemade 100% natural juice without added sugars.
Consuming vegetables and fruits as juice not only helps to intake the recommended amount but also is known to increase the body's absorption rate of nutrients, and this has been scientifically proven through this study.
Professor Park Eun-joo said, "Through this study, we confirmed that consuming freshly squeezed juice is more effective for vitamin C absorption in the body than eating vegetables and fruits whole." She added, "Vegetables and fruits contain not only vitamin C but also abundant phytochemicals such as polyphenols, so it may be healthier to consume a variety of nutrients through vegetables and fruits rather than taking vitamin C supplements."
