2 cucumbers, 1 tablespoon of salt, 2 tablespoons of red pepper powder, 1 teaspoon of minced garlic

1 teaspoon of sugar, 1 tablespoon of vinegar, 1 teaspoon of sesame oil, 1 teaspoon of sesame salt

Prepare half an onion (optional) and half a green onion (optional).


 

First, prepare the cucumber.

After washing the cucumber thoroughly, cut off both ends, split it in half without peeling, and remove the seeds.

Then, slice thinly.

The following is the salting step. Sprinkle salt on the sliced cucumber and let it sit for about 15 minutes.

🔹After soaking the salted cucumber in water, rinse it and squeeze out the excess water.

Prepare the seasoning.

Put red pepper powder, minced garlic, sugar, vinegar, sesame oil, and sesame seeds into a large bowl and mix well to make the seasoning sauce.

The prepared onions and green onions are sliced thinly.

When making kimchi with cucumbers, adding onions and green onions enhances the flavor even more.

Finally, mix everything together. Add the salted and drained cucumbers to the seasoning sauce and toss evenly.

Carefully mix so that the seasoning is well absorbed.

Taste the seasoned cucumber and adjust the flavor by adding vinegar, salt, or sugar as needed.

 

 

To maintain the crisp texture of cucumbers, it is important not to soak them for too long.

If you want to add more spiciness, you can adjust the amount of red pepper powder or add Cheongyang peppers.

A sprinkle of sesame salt at the end adds a nutty flavor.

 

Cucumber salad is best enjoyed fresh.

If stored in the refrigerator, it is best to consume within 2 to 3 days in an airtight container.

Since the crisp texture of cucumbers may diminish over time, they should be consumed quickly.

 

If seasoned cucumber is boring, try making seasoned ridged gourd. Ridged gourd refers to an old cucumber.

 

Baek Jong-won, CEO of The Born Korea, previously revealed the recipe for cucumber radish salad on tvN's 'Home-cooked Meals Baek Seon-saeng'.

First, peel the skin of the cucumber with a potato peeler, then cut it in half, remove the seeds, and slice thinly.

Thinly sliced cucumber is salted and marinated, then mixed with green onions, red pepper powder, minced garlic, sesame seeds, sugar, and red pepper paste to make a seasoning sauce.

 

Wash the wilted radish slices in water.

For a firm and chewy texture.

Mix the drained cucumber with the prepared seasoning sauce.
