Zucchini is a charming ingredient with a sweet and crunchy texture. If you're tired of common recipes like zucchini pancakes or stews containing zucchini, pay attention! We have prepared a one-bowl dish called 'Spicy Zucchini Rice Bowl' topped with zucchini, onions, and a fried egg over rice.

 

 

Spicy Zucchini Rice Bowl

 

Instead of plain white rice, we prepared multigrain rice to slow down blood sugar rise and increase nutritional content. When cooking multigrain rice, choose about five types of grains rather than mixing too many. Domestic research shows that five-grain rice is nutritionally superior to eight- or sixteen-grain rice. Zucchini that enhances the savory flavor

Zucchini has a low calorie content of 38 kcal per 100g, so even when generously added on top of rice bowls according to the recipe, it reduces the calorie burden. Zucchini is a vegetable rich in beta-carotene, which is converted into vitamin A in the body. Vitamin A is highly effective in protecting eyesight, preventing aging, and preventing skin damage. When grilled to a golden brown with olive oil as per the recipe, the absorption rate of vitamin A in the body increases.

 

Keep your blood vessels clean! Chives

 

Chives are rich in sulfur-containing compounds that strengthen blood vessels. Diabetic patients have high blood sugar levels, making their blood sticky and hindering circulation. The vitamin A and vitamin C in chives help purify the thickened blood. According to the Rural Development Administration, the better the chive leaves are tender and vibrant in color, the better. When storing chives, wrapping them in plastic to prevent the leaf tips from breaking helps maintain their freshness for a longer period.

 

Eggs that build solid muscles

Eggs, a high-protein complete food, are rich in not only protein but also lipids, vitamins, and minerals. The key component is undoubtedly protein, with 13.46g of protein per 100g of eggs, and they are also rich in leucine, an amino acid that makes up protein. Leucine is a component that helps with muscle formation and must be obtained through food because it is not produced in the body. Muscles are a primary organ that uses blood sugar as an energy source, which helps regulate blood sugar levels.

 

Ingredients & Recipe (per serving)

One bowl of multigrain rice, half zucchini, half onion, one egg, 10g chopped green onion, 10g chives, half red chili pepper, a pinch of salt, one tablespoon of olive oil, a little sesame seeds

※Seasoning sauce: 1 tablespoon of soy sauce, 1/2 tablespoon of oyster sauce, 1 teaspoon of minced garlic, 1 teaspoon of perilla oil, 1 teaspoon of red pepper powder, a little stevia

Slice the zucchini into 0.2cm thick pieces.

3. Thinly slice the onions and sauté them in a frying pan.

Slice the green onions and chives into 0.2cm thick pieces, and julienne the red chili peppers.

5. Eggs are fried.

6. Mix the ingredients to make the sauce.

7. Put the grilled zucchini, green onion, chives, and seasoning sauce into a bowl, mix well, and adjust the seasoning with salt if it tastes bland.

Place rice in a bowl, then add 7, onions, and fried eggs on top, garnished with red chili peppers.
