What's different?
Tofu instead of bread
Instead of bread, tofu was used to reduce carbohydrate and fat content while increasing protein content. The plant-based proteins in tofu are rich in glycine and arginine, which help stimulate insulin secretion and assist in blood sugar regulation. Tofu is composed of over 80% water, making it a filling food that provides long-lasting satiety even in small amounts. The soybeans used to make tofu are rich in isoflavones, which help regulate blood cholesterol levels and promote vascular health.
King of herbs, King Basil
Basil is a spice that enhances the flavor of dishes with its distinctive aroma. It also offers various health benefits. Rich in vitamin K, it helps strengthen the bones of diabetic patients who are weakened by high blood sugar. According to research from Chungbuk National University’s Department of Food Biotechnology, basil had the highest vitamin K content among 136 types of foods analyzed by the research team. Basil reduces inflammatory cytokines that damage the immune system, thereby boosting immunity. A study from Pennsylvania State University in the United States found that cooking with basil decreased the levels of inflammatory cytokines in the body.
Basil and tomato, a perfect match
Tomatoes contain 95% water, making them a vegetable that helps replenish moisture. Having sufficient body water promotes metabolism and lowers sugar levels in the blood vessels, which is beneficial for vascular health. Additionally, they are rich in vitamin A, iron, calcium, and zinc, helping to prevent diabetes complications. In this dish, they are paired with basil, which complements them very well. The tangy aroma of the tomatoes is enhanced, creating a more vibrant flavor.
Ingredients & Recipe (per serving)
1 block of tofu, 1 piece of chicken breast (100 g), 1/2 tomato, 1/4 apple, 1 leaf of lettuce, 1 egg, a pinch of salt, 1 tablespoon of olive oil, a small amount of dried basil
1. Split the chicken breast in half, marinate with olive oil, a little salt, and dried basil for about 30 minutes.
3. Place the cut tofu on a paper towel to remove excess moisture, then sprinkle with salt to season.
4. Lettuce is cut into pieces roughly the size of tofu.
5. Slice the tomato to a thickness of 5mm and pat dry.
6. Remove the skin from the apple and slice it thinly.
7. Cook the rested chicken breast until golden brown in a frying pan.
8. Dip the tofu in the egg mixture and then fry it.
9. Place lettuce, chicken breast, tomato, apple, and lettuce in order on one side of the tofu, then cover with the other side to make a sandwich.
