Eggs instead of wheat rice cakes and rice cakes

 

Eggs are rich in protein and help promote muscle growth in people with diabetes. Having more muscle mass allows for better glucose consumption, leading to improved blood sugar control. Consuming two eggs according to the recipe can fulfill 20% of the daily recommended protein intake. Eggs also provide a long-lasting feeling of fullness and are low in calories, which aids in weight management. According to a study conducted by the University of Castilla-La Mancha in Spain, people who consume more eggs have a lower body mass index compared to those who consume fewer eggs.

Weight loss cheat key: Konjac

 

Konjac is a low-calorie food with approximately 10 kcal per 100g. The Korean Society for the Study of Obesity also listed konjac as a food for weight control. It is composed of dietary fiber and water, making it low in calories. The dietary fiber in konjac dissolves into a sticky substance in the intestines, attaching to other foods, which slows down the absorption of carbohydrates and gradually raises blood sugar levels. However, individuals with gastrointestinal diseases or impaired digestive function, such as diabetics, may experience bloating, stomach rumbling, or mild diarrhea, so they should avoid consumption. In such cases, substitute with brown rice rice cakes or increase the number of eggs.

 

Onions and green onions adding healthy sweetness

 

Onions and green onions are essential ingredients when making tteokbokki. Adding onions and green onions to the broth during cooking allows them to cook and develop sweetness. The abundant quercetin in onions helps prevent fat accumulation in blood vessels, making it effective in preventing cardiovascular diseases. To fully absorb the nutrients in onions, they should be sliced vertically. This way, tissue cells are broken down, activating more nutrients. The allicin component in green onions boosts immunity, and vitamin C helps eliminate active oxygen in the body, preventing inflammation.

 

Ingredients & Recipe (for 2 servings)

4 boiled eggs, 100g of konjac, half an onion, half a green onion, 150mL of water, a little sesame seeds

Seasoning: 2 tablespoons of red pepper paste, 1 tablespoon of red pepper powder, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 1 teaspoon of minced garlic, a pinch of stevia

1. Konjac is sliced to the length of tteokbokki and briefly blanched in boiling water.

2. Add all the sauce ingredients and mix well.

3. Put the boiled eggs in a frying pan and cook until golden brown.

Add 150mL of water, seasoning sauce, and konjac to step 4, bring to a boil, then add onion and green onion and simmer.

5. Serve on a plate.

    저도 곤약 넣은 떡볶이는 처음 들어봤어요. 근데 괜히 건강해지는 느낌일 것 같아요. 한번 만들어 먹어보고 싶네요. 곤약이 칼로리도 적고 하니 당뇨에도 좋고 체중조절해도 좋을 것 같아요.
